Nothing beats tender golden brown Carnitas right from the large disco. For those not familiar with Carnitas, it is pork braised in lard until tender and golden brown. Here is the way I like to make carnitas on my stove top. Cook time may vary depending on the texture you want to achieve. I do suggest not to cook until it falls apart in the pot. Carnitas should still keep its shape, but be fork tender. INGREDIENTS 3 1/2 to 4 lbs Pork Shoulder 1 lb lard 2 tsp salt (or to your taste) 1 medium to large orange 1/3 cup juice of orange 4 cloves garlic 1 large bay leaf 8 oz Coca Cola (room temperature) 1/3 cup evaporated milk

Very strange Carnitas recipe about once a month or so I head down to the little village neighborhood here in Chicago for Carnitas and usually get some tamales from out in front of the store I asked one time if they could show how they make their Carnitas so good and the owner gave me a tour so cool their first step was a low fry like a comffie for a long time but they cut up their pigs in huge cuts after that they have another huge copper kettle full of real hot lard where it is deep fried then to the butcher in the front who cuts it to order people can be lined up down the block on a Saturday morning awesome if you ever get to Chicago try it on 18th st

Every time I see Mexican food recipes in English I get kinda nervous that it ll be white washed or something but this was genuine Mexican food and it looks so good! Plus I m Hispanic but have lived in the US for a long time and a lot of the time don t know what part of the animal is used bc I don t know the translations from Spanish to English when it comes to meat so this helps: )

I'm not afraid of cholesterol, so I don't mind frying in lard or any other oil. But using all that oil as a 'base' for all the other ingredients? While it might be traditional, the thought of all that grease is simply disgusting to me. Thanks for the video though, because I'll likely be using it with some other base (like chicken stock)

The reality is that Carb are the one responsible for high colesterol, I work with a Lady that she don t use ANY kind of OIL or FAT, but she eat a LOT of Carbohydrates and she put her colesterol more high that 3 months ago. And the doctor tell her: Stay away of carb and add some fat to your diet, but she don t listen.

Hi! I'm a new sub. I love your video. Question, what does the evaporated milk do for the carnitas? Is it for color or flavor or both? My mother in law use to make them just like you but without the milk. shes gone to heaven now and I never asked her for her recipes but I do remember it look just like that.

Yumm! I have been teaching myself how to make carnitas. I havent used Lard but I now need to use that instead to get the authentic taste of them. I also read In other recipes using coca cola in it too-the caramelization looked sooo good! Great video, loved how you threw in the DIY salsa

Made this last night. We ve tried so many slow cooker recipes but I had the time and wanted to try these. I don t think I ll ever go back. This was wonderful and hubby liked it so much he didn t say a word until his plate was clean except grunts of appreciation. :) sharing with everyone!

Zarela Martinez the Mexican chef, owner of Ninfas in texas. Years ago she taught me and said you have to add a splash of milk to her carnitas and of course she used lard. She is the mother of Aaron sanchez the food network show. He grew up in her restaurants.

Ok so quick question, I see some people use pork loin, and others shoulder. what would you say works best and/or is more authentic? I recently made some for the first time using pork fat and the cut was a loin. but it didn't come out ALL the way I'd like it.

In the past I would only boil the meat and the fry or broil it to make it appetizing to my family but now this is the only way I make our carnitas. I've made it like this for over a year now and we are very happy with your recipes. l
