Caldo de Res is one of my favorite soups. This recipe is the way I like to make it. You can add the veggies of your choice and chayote is a traditional veggie I grew up having in beef caldo. If you can find it, use it in this recipe. INGREDIENTS 3 lbs Beef Shank 6 to 7 quarts water 2 cups beef broth or stock (or water) salt to taste 5 cloves of garlic 1 medium onion 5 small to medium carrots 3 celery sticks 3 to 4 potatoes head of cabbage 3 Mexican squash or zucchini 2 fresh ears of corn 8 quart stock pot w / lid Mary: You make your caldo like I do, except that I like to eat it with flour tortillas and I don t add lime to my caldo or tortilla. (Although I don t think you added lime to your caldo) Another thing I enjoy about your videos is how you explain things for those who are new to cooking. And I love the background music as well! Going to sound like a strange question but I'm wondering what I could make with the solid items stained from the broth. I'm about to have a gastric surgery and I'll be stuck to clear liquids for a few weeks. This recipe looks like like it would be a wonderfully tasty broth packed with protein and no/little salt. It just seems like a waste of all the meat and vegetables that I wouldn't be able to eat.

This is my 2nd time making caldo de res! 1st time was good (from another video). I followed instructions from your video and it came out soo delicious! I tweaked it here and there and it's the best caldo ever! Can't wait till my dad has a huge taste of it, he's going to love it!

We have the same similar soup/stew in my Filipino culture called Beef Nilaga and Bulalo, we add almost the same veggies, but we add fish sauce to enhance the broth along with the beef boulion. We eat it with rice and dipping sauce on the side is usually soy sauce or fish sauce.

I like to keep my vegetable small so I can get a taste of everything in one spoon bite. That's just me! I remember my mom and dad would put these huge pieces of vegetables. Taste good but just easy and more convenient to eat with small veggies. But each there own. Love it

Awesome all mama's have their own variations add some spices etc. my MIL served hers over yellow rice with lime diced onion and corn tortillas on THE side I've had it with a dash of taco seasoning just s touch very good so take s basic recipe (like this and make it yours!

Check out BULALO recipes. It is a Philippine version of this dish. That dish is also rustic, uses a beef shank and includes corn. They eat it with rice. Nothing you eat is better than this. I would rather eat a good bowl of Caldo de res or Bulalo than a steak.

i remember my parents making this, didn't know it had a name. I used to think they through things together because we were poor. It wasnt until jr high that i found out other people ate papas con chorizo, i thought that was a dish my parents made up too. So weird

I really do not get all the thumbs down on this, but where is the rice? My ritual is to get a warm corn tortilla stuff it with some rice spoon some caldo into the rolled up tortilla the bite Yummy: -) Never seen with celery in it but looks awesome!

My late mother used to make this yummy soup. On cold winter days I couldn't wait to get home from school cuz I knew there would be fresh made tortillas & this soup! I never got it quite like mom did but I'll try again using this recipe. Thanks!
