Today I am cooking at home and making carne deshebrada quesatacos. This is tender stewed beef shredded and cooked in a red sauce. You can add carrots and potatoes to make it a hearty meal or use the meat for tacos.
Ingredients
3 to 3 1/2 lbs beef chuck roast (I used a brisket flat)
2 1/2 L water
1 beef bouillon cube (or 1 Tbsp beef bouillon powder)
1 tsp salt
1/2 tsp pepper
2 bay leaves
1 tsp Mexican oregano
5 cloves garlic
half of a large onion
salt and pepper to taste
3 guajillo chiles (softened)
