YUM! I love these! Never made them with chicken though. I m so glad you pointed out to not leave the rice papers in the water too long; I learned that the hard way. Gonna have to pick up a few ingredients the next time I go to the store. I usually make these in the summertime, but for some reason I haven t made them yet this summer. Thank you for the reminder

I make these but i make them different with Imitation crab sticks and shrimp. I put lettuce, cucumber, green onions, culantro, cilantro, avocado, rice noodles, celery, . I make my sauce with peanut butter, red hot chilies, peanut oil, garlic, hoisin, sriracha, water to loosen

Your backsplash by the stove is so pretty We are in our 1st house and it is a fixer upper. I am leaning toward mostly grey for our kitchen since our appliances are black and all of my tools and dishes are so colorful

Years ago a former coworker would bring in the spring rolls that his Vietnamese mom would make. RIP. They were absolutely delicious and were a huge hit.
