Soy Sauce Marinated Eggs Korean Side Dish Recipe

Today I am cooking at home and making my Korean mother in law's Mayak eggs recipe. These are eggs marinated in a delicious soy sauce broth that are best eaten the next day. This is a tasty Korean side dish or a meal. Ingredients 6 large eggs (room temperature) 1/1/4 cup (296 ml) water 1/2 cup (118 ml) sodium soy sauce 3 1/2 Tbsp (35 g) sugar 4 small pieces of dried kelp 2 to 3 garlic cloves 2 to 3 scallions 1 Tbsp roasted sesame seeds jalapeno pepper (optional) 4 cup (950 ml ) storage container with lid Marinate eggs overnight for best results

The trick to being able to easily peel an egg that I've found (I read it somewhere, it wasn't my own idea) is to make sure the water is at a rolling boil when you add the eggs. I add mine cold right out of the 'fridge to water that is rapidly boiling, boil them about 6-7 minutes, dump them into ice water like you did, and they peel really easily every time. I mean EVERY TIME. It really does work for me. Or maybe I've just been lucky and the last 100+ eggs I've boiled just happened to peel easily. :-) I enjoy your videos, please keep them coming.

The best way to boil eggs is put them in your pan cover in water.
Bring to a boil. Once its boils turn off the heat and cover for 10 min.
Once done place in a ice bath water.
They will be perfect!
No risks of getting burned by dumping eggs in boiling water. They won't break either.

The only change I would make (in my very humble opinion) is adding the kombu (or what you are calling dried kelp ) after you take the pan off the heat. Letting the seaweed boil can cause bitterness. More Korean recipes please!

I've tried vinegar every way recommended and it doesn't work for me. All I do now is steam them, usually in the instant pot.
