How To Make Mexican Chicken Soup Caldo De Res

Here are 2 ways I like to make caldo. These are Mexican style soups I grew up having. Whether you make chicken or beef caldo, both are comforting and perfect for the cold weather. Ingredients for chicken soup 2 1/2 lbs chicken drumsticks 3 1/2 to 3 3/4 quarts water 2 dried bay leaves 1 small onion 6 to 7 cloves garlic small head of cabbage (chopped) 2 medium potatoes (chopped in large chunks) 1 large Mexican squash (chopped in large chunks) 1 chayote squash 2 medium carrots 1 celery stick 2 green onions bunch of fresh cilantro (I used parsley) 1/3 cup tomato puree (or tomato sauce) 1 Tbsp chicken bouillon powder salt and pepper to taste INGREDIENTS FOR BEEF SOUP 8-quart pot 5 1/2 to 6 quarts of water 2 1/2 to 3 lbs chuck beef short ribs 1/2 of a medium onion 4 cloves of garlic 2 Roma tomatoes 1 large celery stick 2 1/2 Tbsp beef bouillon powder 1/2 tsp black pepper 1 bay leaf (I forgot this. ) 3 to 4 ears of corn 2 large red potatoes 2 squash or zucchinis 2 medium carrots 1 small head of cabbage fresh cilantro (optional) yerba buena (optional) epazote (optional) salt to taste

I love your videos. I enjoy Mexican food so much. I m gonna try a Mexican kind of maybe street food type of thing called, I think, elote? We have an ice storm here and it looked so warm and cheesy and happy: -) I m not going to Americanize it, though, I even got the Mexican hot sauce, crema and queso fresco. I wish I could ve gone to the Hispanic market but it s all the normal brands from Kroger for this weekend. Next time it s the real store! :)

Looks great, I think I'll make some today, as in Texas, it's cold here in southeast Missouri, it's reported not to even get above freezing for the next 9 days lows around zero.
