Today I am using squash blossoms to make a beautiful gold enchilada sauce. I will also be combining, squash blossoms, sweet golden corn, fire-roasted poblanos, and Oaxaca cheese for the filling. Ingredients 1 1/2 lb (680 g) squash blossoms 3 to 4 poblano peppers 3 to 4 ears of golden sweet corn 3 to 4 spring onion 4 cloves garlic 1/2 cup Mexican crema or sour cream 1/3 cup (79 ml) chicken broth (extra to adjust the viscosity of sauce) 14 oz (396 g) Oaxaca cheese salt and pepper to taste 15 to 18 corn tortillas Valentina: Hey Ma these enchiladas look absolutely fantastic I am definitely going to make them what is table cream is it half and half? Well worth waiting for and watching. In past I've ended up growing squash plants with all male blossoms now I have another great way to use them. May even saute enough blossoms to freeze for future use. Plated up so beautifully.

Does anyone ever use poblanos un-peeled? I've recently gotten (deeply) into mexican cooking and always roast and peel. watching this something clicked. Is it just for flavor (yum) or is the peel super tough?
