Today I am making smothered burritos for lunch and the leftovers will be dinner. The filling today will be green salsa stewed pork, with Mexican red rice, refried charro beans, and Oaxaca cheese. Ingredients for stewed meat 1 1/2 Tbsp cooking oil 2 3/4 to 3 lbs pork meat 1 tsp salt 1/2 tsp cracked black pepper burrito-sized flour tortillas 10 oz Oaxaca cheese Mexican sour cream SALSA 8 medium to large tomatillos 1 large jalapeno 1 small onion 4 to 6 cloves garlic 1 1/2 Tbsp chicken bouillon 1 tsp ground cumin 1/2 tsp cracked black pepper 1/2 tsp dried Mexican oregano 14. 5 oz can of chicken broth (3) 4 oz cans of chopped green chiles salt to taste Kathryn: Angelica, if you opened a restaurant in Houston, I swear I d drive the 100 miles there just to eat your scrumptious food. I got blender envy watching your Vitamix. Lol! Now, I gotta go make me a 2am burrito snack.

LOVE, LOVE, LOVE, this video. I am soooooooo going to make this. Not a big fan of burritos normally, but this looks so good I will make an exception. LOL. FYI, because of you, my neighbors think I am a Tex-Mex expert. My chicken enchiladas are a huge hit. I had one old guy offer to pay me to make him a batch. Like me, he is in Florida too, but from San Antonio.

I swear I wear my family out when they leave me in charge of dinner for the week. Nothing but delicious Mexican food maybe some Italian thrown in for a twist.
Have you ever considered doing a Mexican or Asian spin on a classic dish. I'd absolutely love to see something like that.

Are tomatillos like always ready to roast or blend? Like are they ripe or not ripe. or are they just always ready when you buy them?
