Today I am making a tender juicy roasted chicken glazed with a mustard sauce. The inspiration for the mustard sauce is from a Carolina Gold BBQ Sauce. The tangy, smoky, sweet sauce pairs well with chicken and pork.
Ingredients
3 1/2 to 4 lb whole chicken
Dry Rub Mix
3 tsp garlic powder
3 tsp onion powder
2 1/2 tsp salt
1 1/2 tsp smoked paprika
1 tsp cracked black pepper
Mustard Sauce
1 1/2 cups yellow mustard
1/3 cup apricot preserve
2 Tbsp Shaoxing cooking wine (optional)
1 1/2 Tbsp apple cider vinegar
2 to 2 1/2 tsp dry rub seasoning
Carolyn: I dont think ive ever had mustard chicken before. I could probably also add honey to it to along with the apricot preserves. Ill have to try this recipe. Date: 2021-06-09
