Today I am making house special fried rice my way. This is Chinese take-out style rice that can be a side or a meal. Ingredients 2 1/2 cups cooked day-old rice 2 large eggs 4 scallions 1/4 small onion 3 cloves garlic 1/3 cup water 1 tsp chicken bouillon powder 1 Tbsp dark soy sauce 1 Tbsp Shaoxing cooking wine cooking oil for wok salt to taste 2 tsp sesame oil PORK 5 oz pork meat 1 Tbsp Hoisin sauce 1 Tbsp Shaoxing cooking wine 2 tsp honey 1/4 tsp garlic powder 1/4 tsp onion powder 1/8 tsp black pepper CHICKEN 1 boneless chicken breast 1 Tbsp dark soy sauce 1 Tbsp Shaoxing cooking wine 1/4 tsp granulated garlic powder 1/4 tsp granulated onion powder 1/8 tsp black pepper SHRIMP 10 oz large shrimp 1 Tbsp dark soy sauce 1 Tbsp Shaoxing cookin wine 1/4 tsp granulated garlic powder 1/4 tsp granulated onion powder

I have found that with friend rice, it's not day old rice or using fresh cooked rice, because it really doesn't matter. The secret is getting the moisture out of the rice, especially when it's being cooked the second time around in the actual fried rice. It takes a lot of heat from your wok to get the moisture out of the cooked rice so that it has the same texture as restaurant style rice. The problem is, is that residential stoves don't get nearly hot enough as commercial stoves that they use in the restaurants. It's very very hard to get the same texture out of the fried rice as restaurant style fried rice.

As an Indonesian, you don't need to season those meats. You just add them as you saute the onions and garlic. Some people also use peanut oil to saute. Adding the bean sprouts make it as Javanese fried rice, but with some slices of hard boiled eggs and please, don't add water. It'll make your rice mushy and you forget one of the most important ingredients: sesame oil

Reminds me of Nee Hao house fried rice in Houston. So good! Mama, if you haven't been to Nee Hao, look it up. It's in an area that might seem a little sketchy, but it's fine and the food is cheap and amazing! Ate there for at least 15 years before I retired and left Houston.

I've had good luck faking wok hei with a drop of Liquid Smoke on the side of the wok just after I kill the heat. Give it a good stir. I think it actually ends up scenting the rice, not actually flavoring it. I do that with most of my wok cooking. Seems to be ok.

Zowie! Fried rice is a favorite of mine and this looks great.
I see you use a carbon steel wok. I wish I could convince my wife to use one instead of a non-stick thing, because she doesn't dare heat the wok until it is really hot enough. Sigh.

Hmmm, this day old rice you mentioned, did you refrigerate it or left it out? Btw, every one of your recipes that I have tried has been a hit with family and friends. Especially the carne guisada and macaroni, thank you for sharing your recipes.

I wish you lived nearby, I have a wok (handmade) that I bought in China Town in San Francisco and since my husband passed I don't use it anymore. It does work great, I must say. You have a wonderful day!

I love bean sprouts with my fried rice but a lot of restaurants near me stopped adding them. This looks amazing. I will have to buy that wine!
I also like frozen peas and carrots in mine!
