Today I am making the ultimate tostadas my way. I will be making a creamy cheese sauce and using a creamy avocado green salsa. The toppings are your choice and are versatile Ingredients 1lb lean ground beef 1 tsp seasoned salt 2 tsp light chili powder 1 tsp onion powder 1 tsp garlic powder 1/2 tsp ground cumin 1/2 tsp smoked paprika 1/2 tsp cracked black pepper 8 corn or flour tortillas cooking oil for frying toppings of your choice CHEESE SAUCE 1 Tbsp unsalted butter 1/8 tsp onion powder 1/8 tsp smoked paprika pinch of salt 6 oz cream cheese 8 fl oz whole milk 1 to 1 1/2 cups shredded mild cheddar cheese CREAMY AVOCADO SALSA 1 1/2 cups of your favorite green salsa 1 avocado 1/2 cup Mexican sour cream a handful of fresh cilantro salt to taste

Looks yummy. I always buy several blocks of cheese. I grate them with my salad shooter or food processor. I portion it into baggies and freeze. I always keep one thawing out in my fridge. I don't want to sound negative but I will never buy pre-grated cheese. You are eating saw dust to keep it from sticking. I would never allow a loved one to eat pre-shredded cheese. It doesn't even melt and doesn't have much taste. Freezing cheese does not clump, it has flavor and no wood and fillers. Also cheaper to buy blocks of cheese and grate them yourself. It freezes very well.

Angelica, or anyone really, question from a novice: when one is cooking with oil, how do you go about the clean-up process? Can it be re-used, and if so, will it ever expire or otherwise be harmful to the human body? I know it's bad news to rinse it down the sink, and that my local recycling takes cooking oil.

I love how you use what you have on hand, so talk about substitutions and also, how you explain how to fix a problem on the fly, like how the beans had too much liquid.

My MOM use to call them Chalupas boats in English. Been making and eating them forever can eat them everyday of course Corn torts.
