Here are five of my favorite ways to use rotisserie chicken for dinner. These recipes are perfect for an easy family meal.
Chicken pot pie ingredients
2 Tbsp unsalted butter
1 1/2 lbs cooked chicken
1/2 small onion diced
10. 5 oz can cream of chicken condensed soup
8 oz sour cream
1 1/4 cup of water
2 ears of fresh corn
1 1/2 cup frozen peas and carrots
1/2 tsp poultry seasoning
1/2 tsp onion powder
1/2 tsp garlic powder
salt and pepper to taste
1 cup shredded cheese
can of 8 large biscuits
9x13 baking dish
Creamy white enchiladas
INGREDIENTS
1 lb cooked shredded chicken
12 oz shredded cheese
16 corn tortillas
9 x 13 baking dish
CREAM SAUCE
5 Tbsp unsalted butter
5 Tbsp all-purpose flour
2 cups chicken broth
8 oz sour cream
4 oz can of chopped green chiles
salt and season to taste
Red enchiladas ingredients
2 cans El Pato hot tomato sauce
2 tsp light chili powder
1/2 tsp ground cumin
1/4 tsp cracked black pepper
1/4 tsp garlic powder
1 Tbsp diced onion
12 to 15 corn tortillas
1 lb cooked shredded chicken
6 to 8 oz mozzarella cheese
