Today I am making a Mexican-style breakfast. Migas are a family favorite and easy to make. The crunchy corn tortilla pieces mixed with buttery eggs are perfect. Serve with a side of refried beans, queso fresco and avocado for a delicious breakfast. Ingredients 4 slices thick cut bacon 1 small Roma tomato 1/2 small onion 1 large jalapeno 6 to 8 corn tortillas 1 Tbsp unsalted butter 6 large eggs salt and pepper to taste Irma: Thanks for sharing this recipe. When I was growing up in San Antonio, our family owned and operated a Mexican restaurant in the Westside 40 years ago.
Migas were a popular breakfast dish. We called them Chilaquiles when topped with ranchero sauce and cheese. During Lent, we served it with a small bowl of capirotada.
My point is, I'm ashamed to say that I don't make them anymore. Your lesson was so lovely that I decided to cook some for ny husband this weekend!

If you add a splash of cold water with the bacon. At the start it will help separate the bacon pieces, and render more of the fat while letting it brown more evenly.

Y'all do tomato, jalapeno & onion. It reminds me of New Orleans people using celery, bell pepper & onion. They call it their own personal holy trinity.

Can you give a name of the corn tortillas you recommend. I buy them but always seem to get the ones that are thin and weak. Thank you hon.

Wow! I've never seen Migas like that and I lived in SA for 20 years. I'm making those when my daughter visits Mothers Day. Yum
