Here is an easy Crockpot recipe for caldo de res, which is a Mexican-style beef soup. This is convenient to make and perfect for cold weather. Soup season is here! Ingredients 2 lbs beef shank or stew meat 1 small head of cabbage 1 lb potatoes 2 medium carrots 1 or 2 fresh ears of corn 1 small onion 3 cloves garlic 1 dried bay leaf 1 1/2 tsp salt 1/2 tsp cracked black pepper 6 cups beef broth sprigs of fresh cilantro 6-quart slow cooker salt and season to taste

I start my soup on the stove top, in a large pot. Coat the beef with seasoned flour and brown on high heat in small batches, removing seared meat to a plate to rest. When all the beef is browned, there is a nice fond on the bottom of the pot that I cook off into the water/broth. THEN the beef and broth go into the CrockPot, set on slow. Once the meat is getting close to fork tender, I add my veggies and turn heat up to high. I don't care for mushy veggies and almost always freeze several servings, which when thawed/reheated, keeps the veggies from turning into a paste.

I absolutely love caldo de res and I make it on the stove 98% of the time but when it is cold and I know I m going to be in a rush to make dinner, I too put everything I need for my caldo in my slow cooker. I put on slow and leave it for about 6 hours. It is just as good as it is when I make it on the stove. Love your recipes and your ideas and love, love my HEB too.

Looks delicious I ve made mine in the pressure cooker but with oxtail I cook the meat first for 45 minutes in the pressure cooker and then get a pot add more water and add all my veggie. I also add tomatoes for color and lots of cilantro. Delicious!

I m gonna have to do this now! I ve always done my Caldo de Res on the stove but now that it can be done in a Crock Pot imma do it now thank you so much again Simply Mama Cooks for making dinner quick and easy

Wow that so neat meat as veg all in one has be cheeper and better! For two that would be great! Always trashing food out we so busy never time to eat all! On by the way love! your videos

That looks good I have seen this at my Mexican Super Market so I think I will pick one up next time I'm there only I would probably add Lipton onion soup mix to mine.

Love this soup. I squeeze a little lemon on mine and eat it with a corn tortilla. I've never made it in a crock pot. Gonna give your recipe a try. Thanks.
