I make these enchiladas probably once a week. I sometimes use ground turkey in place of ground beef. You can also use low-moisture mozzarella or mild cheddar cheese. These enchiladas are perfect for dinner. Ingredients lb lean ground meat of choice 1/2 small onion 1 tsp garlic powder 2 tsp chili powder 1/2 tsp onion powder 1/2 tsp ground cumin 1 tsp salt pepper to taste 15 corn tortillas 1/3 cup oil (for softening corn tortillas) 12 oz Colby Jack cheese Enchilada red sauce ingredients 3 to 4 Tbsp oil 1/4 cup all-purpose flour 2 Tbsp light chili powder 1 Tbsp beef or chicken bouillon 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp onion powder 2 cups water Bake at 400 F for 20 minutes Shay: Look here Missy! I have gained some weight in the last 3 weeks. First when I came across your cafeteria cookies. Made at least 7 batches of 12 and that darn sopapilla cheesecake I made yesterday for Valentine's Day! Many years ago a dear friend of mine showed me how she made chicken enchilada's. Starting with boiling a whole chicken. Over the years I have modified her recipe. I use shredded chicken from a local poultry business. I have always used canned enchilada sauce, usually the green gravy. I still haven't found a corn tortilla that doesn't fall apart! I load mine with the seasoned shredded chicken, onion and cheese. Now I am excited to try your enchilada sauce recipe! I just found your videos a few weeks ago and am very excited to watch them all and try my hand at your recipes. Thank you so much for sharing your talent with us!

As I got older I fallen off the make my own enchilada sauce from dried chilies and gone the frozen Bueno red chili route, I follow the online recipe and WALA enchilada sauce! I like mine with shredded chicken, cheese, and topped with chopped raw onion. Heck I'm so lazy I don't even roll my enchiladas, I just stack them and nuke them until the cheese melts. I can't imagine how lazy I'll be in my 80s. LOL!

I guess we both wanted enchiladas today. Instead of doing mine this way, I layered it like a lasagna. I layered it in the following order:
1. sauce
2. corn tortillas
3. meat
4. sauce
5. cheese
I just kept going until I ran out of tortillas, topping it off with cheese and then the rest of the sauce.

Omg! This recipe is almost exactly like mine! I have been making them forever like this cuz my family loves them! I learned from my abuelita and my aunt on how to make them. The only difference is that my grandmother used queso fresco for hers.

Everytime I make anything Mexican my son complains. He is so use to Mexican restaurants he doesn't like it at home. Well to bad for him because I'm making this this weekend

I absolutely love your enchilada recipe, and my family does too! I used the last bit of chipotle chili powder, and it gave the enchiladas a little kick. So good.

I keep seeing this hack using paper towel and tongs to saturate grease out of pan without having to scoop out the meat. Have you ever seen or used this hack?

I feel dumb for asking this but can you please show exactly how to do the corn tortillas? Mine end up being too oily and STILL fall and rip apart.
