Mark Wiens Banana Chips - Available Now: CHEZ WONG - Known for his ceviche, and cooking stir fry with a massive, borderline dangerously huge flame, Chef Javier Wong is a legend of Peruvian food, especially Peruvian Chinese food. I first saw Chez Wong when Anthony Bourdain went there, and I knew it was a place I eventually wanted to go when I visited Peru. Today was that day #Peru #Lima #PeruvianFood #ceviche 1. Open hours: 1 pm - 3: 30 pm (this is ceviche time in Peru) 2. Reservations are a must, no walk-ins Part of the reason to eat at Chez Wong when youre in Lima is to experience the show of him cooking - hes truly gifted and skilled at cooking and at performing. The highlight is him bringing a huge Peruvian sole (flounder, known as Lenguado in Spanish) out from the kitchen to prepare lunch for all the guests. You dont know what youll get on his menu, and I think he used to make more dishes, but hes making fewer dishes now. But you get whatever he makes for that day. Ceviche - Youre guaranteed to have a taste of Chez Wongs legendary ceviche. What impressed me was its simplicity, fresh fish, lime juice, salt, and pepper, onions, and thats it - but with some chilies on the side. The Leche de Tigre, or ceviche juice, is out of this world. I wouldnt say its the best Peruvian ceviche youll eat in Lima, but it was one of the freshest and definitely the cleanest tasting ceviche I had during my trip. The fish was outstanding. I was hoping for tiradito as well, but I think he doesnt make it anymore. Stir Fry - After ceviche, Chef Javier Wong sliced up more of the fish and added some ingredients like bok choy and mandarin to a metal mixing bowl. Then he went to the back to stir fry. His stir frying skills are next level master, genius. He cranks the fire so high, the flame reaches the ceiling before he even adds the food. The stir fry goes up in a flame of glory, infusing all the ingredients with the glorious breath of the wok. Its truly beautiful to see him so calm with the fire. The stir fry was incredibly tasty, perfectly seasoned and balanced. And again, that fish was the highlight

It is true there is no doubt that we have the best food in the world recognized worldwide but everything you ate in Lima and Cusco that is nothing the next time you are in Peru I would like to invite you to take a walk around Arequipa a quiet city, its historic center is so beautiful through its streets, especially its food, its drinks, its desserts, you will be overwhelmed with the Adobo. 22: 05 I fell so bad watching this video ofcourse that is not a good ceviche, and for that price man he screwed you up bro, it isn't your fault you dont know what is the true ceviche you were not born in Peru and it's easy to fool a foreign if anyone want to try the real good ceviche I recomend to go any market in Lima. You will find something else than fish lime salt pepper and aji. Ceviche is more a simply food and not is expensive at all imagine if every good ceviche cost that price nobody could try ceviche in Lima Anyways its your money and you waist it. Believe me I have eaten ceviche all my life and I know what you eat was only fish salt and lime you could do it by yourself at your home for 10 bucks.

no me gusto ni la preparacion ni el servicio falto mucho los extranjeros pensaran que es asi pero el ceviche no se sirve asi ni el salteado raro tampoco, la gastronomia peruana es mucho mas que que los ojos rasgados asiaticos de javier wong y el animo y la poca gracia de cocinar y servir un platillo peruano

For those who wants to make this dish, the secret is in the lime. You can't use American lime. He uses Peruvian lime which you only can get there but if you want to make this dish in America you can have the same taste using another type of lime. Like if you wanna know the secret

Peru has much much cheaper and amazing food. True they have legendary restaurants. But being a budget traveler I really enjoyed their street food (very healthy by the way) and fruits. I only spent less than 60 for food during the whole week I stayed there.

Mark, was the rock song choice a subtle homage to Tony Bourdain? I noticed it goes against the grain of your usual song choices. If so, thank you. This video made my heart ache and miss Tony, but I'm glad that people continue to be influenced by him.

Mark reaction is a natural way on how to express his feeling to the food he taste and thats one of his signature style to his vlog but the man whos wearing blue t-shirt and eye glass is Over Acting or much to say is not funny. .just saying

Honestly, as a Peruvian, Chez Wong is the most overrated (and overpriced) restaurant in town. The ceviche has great quality fish, but his preparation is meh. Bland, too acidic, and I am not a fan of the pepper with molle.
