Malatung, hot pot, and barbecue kebab don't need highly experienced cooks, customers even do the cooking themselves. Street food is ruining traditional chinese cuisine art. Cooks used to take years of training and highly regarded for excellence. Some dishes took hours if not days to prepare and the maximum taste only last an hour or less. The beautiful art is being lost by the convenience focused younger generations.

how are you eating so much and staying in good shape! I need that secrete North West food is really my favorite, in ShanXi Datong the food is AMAZING as well. And a lot less well known. Just getting a bit popular amongst Chinese tourist now, but completely out of the radar for foreigners. The pallet is similar to XiAn, but with its own twist. Just delicious, if you get a chance you should go try.

Here are my thoughts on chill and spice as a European. It kills flavour! More chilli is not better, it is worse. Chilli and other spices can create a warming or numbing affect on the palette and amplify the experience when eating food. It needs to be added in moderation to meet the palette of your customer. Extra chilli and spice is an excuse for bad cooking and bad flavour.

What is your experience in China regarding food safety Certain regions are known to be pretty terrible. Reusing hot pot oil (i. e. spit oil, or fishing out fat from sewers without proper treatment and using it.

I lived for a few months in Shenzhen in 2005 and I can still remember how delicious all of the food there was. Love Chinese food with Sichuan pepper and chilli oil. And the street food/restaurant food is quite affordable too.

For Muslims, China is actually a very easy place to visit in terms of food. Halal restaurants are very common and clearly marked so you won’t be concerned about what you’re eating.
