Mark tremendous video as usual I have to tell you I went to the Old Airport Road Hawker Food Centre last week based on your recommendation. My honest opinion, it was shabby, rundown, dirty and most stalls were empty and not staffed. In my opinion, it was NOT worth a special trip to go and check out. I laughed out loud at your question on where to eat ROJAK in Singapore - the correct answer is nowhere. ROJAK is an Indian dish and that clown making it may make it from scratch and yes he has a line-up on occassion, but after trying it for myself it was an incompetant and sickly sweet approximation of ROJAK but nowwhere near the real thing. Truly Mark, this shows your inexperience with food in this region, it was ghastly and you should remove that piece from your video.

Fruit rojak consists typically of cucumber, pineapple, benkoang (jicama, bean sprouts, taupok (puffy, deep-fried tofu) and youtiao (cut-up Chinese-style fritters. Raw mangos and green apples are less commonly used. The dressing is made up of water, belacan (shrimp paste, sugar, chili, and lime juice. Ingredients vary among vendors with some also using hae ko prawn/shrimp paste, tamarind or black bean paste in the mix. The ingredients are cut into bite-sized portions and tossed in a bowl with the dressing and topped with chopped peanuts and a dash of ground or finely chopped bunga kantan (pink ginger bud.

Mark, your food selections have honestly changed my diet for the better. I dont use wheat noodles-just rice or Jasmine rice- no MSG or regular salt. Occasionally I use iodized Himalaya or sea salts I'll use Mrs. Braggs aminos( no salt but strong) in place of shoyu, and vinegar- her vinegar-strong as well. Mrs. Braggs kelp sprinkles with sea weed, lemons, limes, white or black peppercorn. Ponzu and plumb vinegar changes the profile to my liking as does a lo salt fish sauce. 20 lbs down and counting- cut my diuretics in half Keep up the great workThanks

Nice selection of food. The old airport hawker centre is indeed one of the better hawker centres in Singapore. You should try the western food here. Especially the lamb chop. Yes Western food of all the things to try in a Singapore hawker centre. It is the best lamb chop i have ever eaten in a singapore hawker centre. ( with lots of garlic ) To all foreigners out there. Do try as many dishes here as possible. They are safe to eat, inexpensive and simply delicious. Oh don't forget to follow the long queue. the longer the better. Endorsement can't go wrong.

Mark, The next time you and Ying are in Singapore go to the Bugis Center Food Court and try the Claypot with chicken (or whatever) it is cooked rice in a clay pot - sauce and chicken are scooped into a pool made into the middle of the rice and as it cooks the flavor goes out into the rice. On the outside of the pot the rice becomes crusty and so full of flavor. It is great. Of course you eat it with sambal, Malaysians and Indonesians eat sambal with everything.

Mark, my whole family is your fan. we love your videos so much and we watch you every night. I just want to tell you one thing, you are very good but you put too much spicy in your food. I wonder if you can really tease the original favor from the food. Please try to eat your food before you put anything else in there, that will be more fair for us to know the real tease. Thank you for your time to read my comment. Wish you make more great video in the future.

When you return in Singapore, try Laksa noodles soup, super spicy with coconut milk. Shopping with cheap prices of goods, try to go Bugis night market. They are open starts 4pm up to 11pm. Always watching you and enjoy your facial expression, sometimes I tried to imitate it, but you are the only one who can do it perfectly. Take care always with your travel and your family. GOD bless you more This is Mary from Philippines.

My family roots are in Singapore (I grew up in Canada) so I've visited regularly in my lifetime and found food from hawker centers or mall food courts, while delicious, gives me horrible stomach pains and diarrhea a few hours later. But if eaten at a proper restaurant, no such problems. Just a heads up to anyone with sensitive stomachs or IBS.
