I wish you came to Hong Kong while I was there for 9 months a couple of year back. Do you know how many times bought roast pig and duck over rice take away only to find out they gave me the terrible pieces. Live in Hong Kong for a person of color was challenging. Next time try the top floor of the Sheung Wan market next to the Macau Ferry.

mark, the easiest way to peel a mantis shrimp/prawn, may i suggest that you hold the prawn with both hands with the hard shell facing you and press it from the head down to the tail, you will see that the hard shell will come off easily.
