In this episode of Keep It Canada, Matty heads to the Quebec countryside to hangout with Emma Cardarelli, chef and co-owner of Nora Grey. Emma's catches quickly outnumbers Matty ten to one when the two go fishing for trout. Before returning their bounty to Nora Grey, they manage to sneak in a quick skeet-shooting session with expert Charles Antoine. Matty also visits the headquarters of Soci-t--Orignal-plus their offsite beehive, Gourmet Sauvage, and Ferme la Rose Des Vents-to source local ingredients for a huge family-style meal where he prepares whelk pie, tourtiere, and roasted chicken with root vegetables. (Oh, and we should mention that Matty also becomes an official member of the Turd Confederacy)

That's weird, rainbows aren't native to Quebec. Laketrout and brook trout are, they have spots. Rainbows are native west of the rockies close to the pacific ocean, they swim out to the ocean as a part of their lifecycle and return as large steelhead, somebody must have introduced them like Germans did with the brown trout. --It's a misconception that rainbows and steelhead are seperate species, they are not. The rainbows futher inland may never reach the ocean. But they can have fertile offspring with those who do. They can't breed with brook or brown trout.

I'm from Montreal myself expected to see something about the sugar shacks(for maple syrup) since that a big part of Quebec culture even my town does a mini street wide sugar shack evenT they started 4 years ago but I remember going to the real deal ones in the mountainsides of the outskirts of montreal

being from quebec, im impressed i didn't hear any classic Quebec curse words you find no where else on earth. They are so versatile as they can be names, verbs adjectives and even nouns such as tabarnac, cawlis. but for sure great show matty it was a blast to watch

it's funny to me that he keeps saying northern quebec but if you look on a map they are in the southern part of the province. i realize barely anyone lives in the northern part of the country, but it is still amusing to me.

Finally another person name Cyril, but mine is pronounced Cy-rul. Which I invented the pronunciation on accident, deciding in kindergarten on how to pronounce it so now it-s weird when a teacher reads it

The greatest thing about Matty, to my mind, is he combines all the rambunctiousness and charm of Ignatius P. Reilly whilst having simultaneously side-stepped the massive sense of entitlement -

Aaaaaaaaaaaaaand in the end Charles-Antoine opened a restaurant that, 3 years after its opening, would make it to Canada's top 10 restaurants, the Montreal Plaza. Cheers to this guy
