Claudette Zepeda, chef and amateur Mexican food anthropologist, unpacks chongos zamoranos, a unique-looking Mexican dessert made from milk curds, cinnamon, and sugar that dates back to the 16th century and the Spanish colonization of Michoac-n. The recipe, which is essentially a cheese making process, calls for animal rennet, milk, and egg yolks to coagulate slowly in a warm pot. As the curds form, Claudette cuts them and spices them with Mexican cinnamon and lots of sugar. The finished product may look strange, but tastes rich and sweet, and holds its place in Mexican food history

Stopped watching after the inaccurate history of churros. First off, there are 2 competing theories on where churros come from. Either they're from China--more on that in a bit--or they were invented by Spanish shepherds. Secondly, Spain never made it to China; that was Portugal. Third, Portugal never -colonized- China; Portugal was granted a concession by the Ming Dynasty in Macao and parts of Formosa/Taiwan. According to the China theory of churros, it was the Portuguese who brought it to China. --If you're gonna -fancy yourself- a cultural anthropologist, make an effort to get it right.

I honestly love her videos, and I've never liked munchies but if you guys bring her back I'll watch and sub. I'm Mexican, and any time I'm away from home for too long I start getting homesick and there's nothing better to cute homesickness than food from your culture. The pozole video honestly made me cry cus it's reminded me so much of home. You guys need to bring her back her videos are amazing

My mom talks so much about how delicious this is and im always like--What you talking bout willis? - Cuz she never explains what it is, just that its good. Now I know. Might have to surprise her and make this. -Shes from Zinapecuaro, Michoacan so it makes sense

Can she get her own show? I was brought to the states at age of 8 and didn't get a chance to learn my history that well. Its horrible since I find it to be so great and interesting. Hopefully I see more from here on munchies.

I find it very interesting that your recipes are all about colonization's the influence in the evolution of food product but how can you overlook the destruction of a culture of many cultures under the foot of religion!

-Churros are not from Mexico, they're not from -France-, they're not even from Spain. ---Could someone explain to me why France is in that list? --Are there people who believe churros actually come from France?

I loved this as a child-chongos-I haven-t had it in over 16 years -Since we moved to America it-s impossible to come by. Sometimes my grandma would bring us some from Mexico. I remember it being super sweet.

I dare someone to make a type of 'Mexican' canoli, with a filling made of processed bits of chongos (pulsed in a food processor, folded with ricotta, mascarpone, vanilla, and lemon zest.

She talks with this constant -This is interesting- voice which A. She's really bad at. And B. Is super monotone. Plus I'm not really interested in the history lesson, just the food.

Cheesemaking propably stems from people storing Milk in the stomach's of mammals, noticing that the not-so-properly washed ones made the milk curd.
