How To Make Spicy Dan Dan Noodles

Simone Tong of Little Tong Noodle Shop in NYC makes Mala Dan Dan Mixian, a traditional ground pork noodle dish that features tingling, spicy Sichuan peppercorn. Simone adds her twist to this recipe by serving it with rice noodles and adding pickled yellow mustard seeds. Simone starts by pickling mustard seeds and celery, then chops and dresses peanuts, which provide different textures for the dish. While the rice noodles cook in boiling water, she starts on the soul of the dish: the dan dan. Simone heats up oil in a pan and adds ground pork, breaking it into small pieces, and mixes in Shaoxing wine (Chinese cooking wine, Pixian doubanjiang (fermented fava bean paste, and chili powder. She drains the noodles and continues to flavor the dan dan mixture, adding Sichuan peppercorn, sugar, white pepper, Lao Gan Ma (Chinese chili crisp, oyster sauce, dark soy sauce, and zha cai (pickled mustard plant stem. Simone finishes the dish with scallions, ginger, and garlic, and layers the dan dan mixture over the rice noodles. Finally, she tops the dish with pickled mustard seed, pickled celery, chopped peanuts, pea shoot tendrils, and chili oil

Young lady, outstanding recipe, i have to scratch the peanuts, can't eat them. One other thing, if you can find pork cheeks, it has the most flavor on the hog/pig, since you went to UNC you may have tried them, just have your butcher grind a lb. or buy them whole & do it yourself( usually less expensive that way) they are the best cut on the hog/pig in my opinion. Trust me

I'm not sure about this Dan Dan version because the pork mixture looks so dry. So, when she eats the noodle, it just looks like there is nothing clinging on the noodles to give a flavorful bite. I guess I have to taste it to change my mind, but by the look of it, the dish just look too dry with no flavor to cling on the noodles

Simone is a dear and gave me some of her time to talk about her delicious innovative cooking when I was at Little Tong Noodle Shop. I will definitely be trying out this version of Dan Dan noodles, and will be going back to her restaurant the next time I'm in New York City. Don't miss her -1 dumplings special!

OMG YES! MY wifes boyfriend makes dan dan noodles but he hasn't given me any in sooooo long. very glad i found this so i can make them myself, hopefully I can use the car in January to go to trader joes to get the ingredients. thank you munchies!

This looks so good! I loved the advice about the noodle cooking time- play 2 songs. This will come in handy for my oldest daughter who is autistic and enjoys cooking but sometimes has poor time management skills but we always have music on though!

just recently ate my first dandan made by chinese lady, i would have been real disgusted by celery, but there was none. This combination kinda sucks and the presenter was abvoiusly cocky and her partner porbably gets beaten up once in a while.

More than likely that I will not cook this, not because it doesn't look amazing, but because I've never cooked with 90% of these ingredients. I'm a simple kind of gal! But I'll eat it in a heart beat. Someone, please cook this for me!

Lady is cool and food looks good but hell no i will never eat it. why! Sorry but it is grossing me out watching he use her hands while having band aids on fingers on both hands touching the food. very surprised she didnt wear gloves

Great video. In fact the first Munchies video where it doesn-t seem like the chef is stoned out of their mind. It just seem to be a trend on these videos; all of your chefs always seemed to mirror it-s viewership - young and high.
