When we visited chef Diego Hernandez at his restaurant Coraz-n de Tierra-located in the Guadalupe Valley in Ensenada, Mexico-we knew we were in for a night of delicious food and fine wine tasting, but we didn't know we were about to step into an almost fraternal community of local chefs, winemakers, and entrepreneurs that all work together and share a life of food, drinks, and good times. Diego gives us a tour that begins in his vegetable garden, where he chooses his everyday ingredients, then takes us to Laja, Jair Tellez's restaurant that started it all. We visit a local wine cellar where we taste the finest Mexican sparkling wine, and end the day back in Coraz-n de Tierra, where Diego and Jair are in charge of the music and prepare some of the best carne asada ever tasted by mankind

This is why I like chefs night out. Really outstanding talent eating really amazing food, enjoying a rare night with friends. Ive been wanting to visit the Baja wine region for years. Just been shown another delicious reason. Keep sharing these amazing videos. Blessings ChefMike.

Great episode! Really diffrent and innovative the whole farm to table concept isnt very common especially out in the cities, and the guys really seem to love what they do, que chingon que sigan asi para que crezca la region y sea mas conocida en el mundo, good job

dam I miss Ensenada, so much family down there. its funny because ive never really seen this part of Ensenada maybe drove right passed it, it looks like a rich, and white thing to do but whatever. VIVA MEXICO CABRONES.

Baja is the place to go no doubt about it. My family goes to Ensenada just about every month since we live like 2 hours from there. and always go through this place. Definitely recommend going very down to earth people.

El Valle de Guadalupe is such an amazing place where the magic of the place makes the food over loaded with taste and a lot a lot more! Can-t get enough of it! ---
