Not all of us are lucky enough to live near a local Mexican restaurant that serves great tamales, so we enlisted the help of Guerrilla Tacos owner Wesley Avila to show us how to make top-notch tamales at home. Good news: it's a much less daunting task then one would think. (Hint: Wes's secret weapon is the microwave) Wes also shows us how to make an accompanying salsa that's so good, it should be bottled

A technique in France? Wow, that's surprising, and quite saddening. Really, you would NEVER see a microwave in a professional kitchen; a professional kitchen who CARES about the food. Not only because of the unknown health red flags that have been raised time and time again, but because anything that is done in a microwave can be done traditionally; and, much better. Taste/texture isn't always everything. Food has to be prepared with care, not with a microwave.

Get over it people. this guy came up with his own version of tamales. Anyone that-s ever been to Southern Cali would know this isn-t too odd for food out there! Don-t get me wrong, I-m a traditionalist too, but don-t get all butt hurt because the guy is creating his own version of tamales. the most celebrated chefs in the world are often known to create their own version of various foods.

The steaming process is very similar to our traditional Brazilian northeastern pamonhas. We make a cream of corn and it's steamed on the corn husks. It can be sweet or savory. Very popular in Brazil. I had no idea tamales were so similar to one of our most traditional indigenous dishes.

A chef I worked with in a fine dining restaurant about 20 years ago told me that French chefs use microwaves a lot. And he wasn't dissing them either. I saw him pulling stuff out of the micro all the time. He went on to become the Executive chef at the Greenbrier Hotel.

You 20-30 year old mexican men who have no idea how to cook make me laugh. Mexican cuisine is incredibly diverse, go to Oaxaca and tell them not to eat vegetables. Just stay in your parents house and eat your moms food and stfu.

They're probably good, but the masa doesn't look well done. Kinda just looks like mush. I will have to try that filling though. I think leaving them to steam in a larger container will really do them well. -Regardless, just do you.

Yo don't do this white boy recipe please don't the corn husks have sides if you put the masa in the wrong side it will stick to the husk and won't be able to eat it and it does take kinda 4hours to cook if you are doing allot

This is not how you make Tamales lol. If you want to see how to make real tamales come to my house for christmas my Ama and all my Tias in an assembly line making them, and not these weird squash wannabe tamales lol.

Honestly its not the tamale many mexicans know but if its his tradition then thats his tradition the point is that he-s bringing people into this massive and glorious tradition many mexicans are involved in
