I learnt this from the Gordon Ramsey scrambled eggs - never add salt at the start of the cooking process - it changes the texture - if you do not you get a good creamy consistency from the eggs, if not a watery mess.

Farideh, your excessive sweating is from Hyper Hydrosis! You can have botox to stop the sweating. in the UK this WAS available on the NHS, i suffered for years, and it changed my life. True Story!

I-m confused. I thought the same spatula you used for the raw meat could not be used once the meat is cooked. You are supposed to handle the cooked meat with a different spatula.
