I lived in Hong Kong 5 years ago, in Kennedy Town, and there was a sandwich shop there called Sunday's Grocery (which I later found out was a part of this guy's franchise that includes Yardbird. They sold 8 different sandwiches, each inspired by another global cuisine. I wanted to try all 8 of them before I left the city, but after trying this baby, I never even considered touching one of the others. It was just hands down the best sandwich I'd ever had and I knew it couldn't be topped! I've been trying to recreate it since I got back home, but never pulled it off. For 5 damn years, I've been left with only dreams of how glorious this sandwich truly was. --When I saw this video I damn near pissed myself. Looks like, after 5 long, sultry, grueling years, I'll finally get to sink my teeth into that beauty once again. God bless, and THANK YOU SIR.

It's funny about the gloves, I'm a hands on girl because otherwise I can't feel the texture of what I'm making. My hands tell me everything I need to know when I'm cooking, especially since I do a LOT of pastry baking, so I need to feel of it's too dry or too sticky, etc. But there is a thing with korean cooking (my husband is korean) about using your hands rather than utensils to stir and make, even if they are using gloves hands for products that must be fermented (to keep it very sanitary because fermentation is a whole other beast, they are still mixing with their hands because there is an essence that effects the flavor that can only come from using your hands.

Er, chicken katsu sandwiches are made with chicken CUTLETS, hence the term -Katsu- (from the Japanese interpretation of -Katuretsu- or -cutlets-. I'm in Japan right now, and both my Japanese flatmate and I are watching this video with mild amusement. We've never had a minced chicken burger, posing as a -cutlet-. --What a strange video.

Great video and love this dude! Thanks munchies for this great content. I also appreciate that he mentions composting the outside of the cabbage, but running the onion under water for 10 minutes? depending on the flow of the sink, somewhere between 5 and 22 gallons of water used. seems like such a waste.

I hate this. I hate the size and shape of that patty in relations to the bread. I hate submerging a deep fried patty into a sauce that thick and intensely flavoured. I hate people calling a sandwich a -sando- in English speaking N. America. I hate most of the people who work at Vice.

There's much better food in Japan than a chicken katsu sandwich, and much better sandwiches outside Japan. Good, but I'd choose a nice American deli corned beef sandwich over this any day of the week. Or a hoagie. Definitely stick with Japan for sushi and yakitori though.

Nurses would be good at this. Clean hand, dirty hand is a day to day skill. Also, I'm going to make the bastard version of these because I can get only super fatty ground chicken. I don't own a grinder. I think it will be okay. Thanks for the video.

A real chicken katsu sandwich wouldn-t have ground chicken. -Katsu- means cutlet. 13 years in Japan, I-ve never seen this. He makes it in the katsu sandwich style, but with ground chicken, this is something else entirely.

Gloves my ass. My chef in culinary school said to always wash your hands and people who use gloves are typically the ones who get other sick because they're using gloves and not constantly washing their while they cook
