I love munchies but this video is fundamentally wrong. King crab and lobster will taste good even if it you cook them in bleach. But that doesn't make it a recipe. -1. Saute the garlic and onion first in medium low heat then Stir fry the veggies. -2, noodle should be briefly boiled. Not just sprayed with water. For a more even texture. -3. Same with seafood, quick stir fry first to prevent some pieces not cooked through, then infuse with a bit of stock. -4, that is way too much soy sauce, even in low sodium form it will Rob the flavors of the seafood. -The key of this dish is all about stir frying things separately, not boiling everything in a poopy mess.

Im currently living in Shanghai and a lot of seafood is cooked still in the shell like in this video, which i find particularly frustrating cos you either have to get your hands dirty to get the meat out or stick the whole thing in your mouth and spit out all the shells and skins

I guessed so from your accent. Either Singapore or Malaysian -. Really, if you wanna know what's good to eat. Make sure you find a Malaysian friend. We would eat in high class restaurants and squat beside open drains as long as the food is great.

Am I the only one who hates eating dishes like this where the seafood isn't pre peeled. it makes sense that you want to eat a bite that contains everything in it without having to stop all the time and extract the meat while eating.

I have no doubt this dish is delicious, but is anyone else bothered when you have to stick your hands in and peel the shrimps or scoop out the crab/lobster meat? Why cant you scoop it out before hand or peel the shrimps before cooking

First of all I'm glad there was no skip out on the amount of seafood used lol. Secondly it's so true how dishes of food can remind you of family and bring back memories - shit, my g that kinda made me emotional bro.

interesting technique. don't usually see boiled noodles dressed with a soy seafood sauce (not that it is a bad thing. is it not missing a key flavor, the 'wok' flavor from high-heat stir fry?

Momofuku give you a bowl of this for 60 dollars. Place is overrated to the highest dollar. Awesome chef though, great melancholy, and straight forward.
