First i prefer putting the fries in the oven and cook them there-Second if your going to fry the fries then atleast preheat the oil and then put the fries cuz if you do them the way you do it its gonna come up soggy

That outer layer of onion skin can just be folded back over the root end to act as a handle of sorts. In all the years I trained prep cooks with this method, no one ever cut themselves cutting onions.
