I was born and raised in Chicago. Deep dish is great. But it is not something that we eat on a regular basis. Growing up we ordered thin crust pasta from our local favorite pizza joint. Never deep dish. But. deep dish is a treat. If you-re going to eat deep dish then Lou Malanati-s is the BEST. Their deep dish and thin crust is amazing. You also never roll out deep dish pizza dough. It-s all about the oil that needs to be added in the beginning this is the key to a crunchy crust. You press the dough around the cast iron pan. And never layer it like a lasagna. I-m a purist so it makes me nuts. But. I will say it looks tasty.

Not all Chicago deep dish pizza is made with a cornmeal crust. Just like not all deep dish pizza is a stuffed pizza, but all stuffed pizza is a deep dish pizza. Pro tip: on the last layer of mozzarella bring it up over the edges of the crust so it-s exposed to the heat, you-ll get nice caramelization and have a copy of pequods pizza. So cheese, sauce, sausage, cheese up on the edges, and finally sauce and parm on top. I think I got that order correct

Am I the only one who doesn't notice the music until one of you mention it? Lol maybe because I DJ and am a nightlife person but I seriously don't see a problem with the noise. --What I can't handle is silent backgrounds. It'll make me zone out and not hear anything they say.

Need to use more oil in the pan and let the dough rise a bit in the pan. The goal's to get a bit of a deep-fry effect on the outside of the crust, while it's a bit bready in the middle but protected by the cheese from going soggy.

It's all technically pizza. People just argue over the convenience of each style. One can be carried around and one needs silverware and a plate. We call hundreds of different things -sandwiches- and nobody ever argues about it.

I remember as a kid watch american shows and they would say -Pizza Pie- maybe this is what it was referring to as pretty sure they had Chicago accents so they dont even think its real pizza it a pie a pizza pie haha
