I brined my chicken yesterday and this morning placed it in the jerk paste to marinate for a day. I just completed the jerk BBQ sauce, and my god, this stuff tastes GREAT. Can't wait until I prepare the chicken tomorrow. BTW, I spent many years on Barnes Avenue in the Bronx. I fell in love with Harry's Jerk Center on Gun Hill Road. then Harry left. I really miss his great food. This promises to be close if not better. Bravo, young chef.

Yorkshire sauce really? never heard of that in a jerk recipe. can you explain? Soaking your chips is totally useless if you're just putting it 10min on each side. soaking chips ain't recommended at all. Putting your chicken on the direct fire instead of slow cooking it with smoke like real jerk? Get in touch or else will call at your restaurant

Every time I see someone make Jerk chicken on YT I always think of that woman from Gordon Ramsey where she was dead set on telling him Real Jerk chicken is spouse to be very dry. lol, but beautiful cooking! Love REAL Jamaican Jerk chicken and you sir nailed it,

my only advice as a barbecue enthusiast would be to use a mixture of direct and indirect heat on the bbq otherwise there is risk of really burning the chicken way before its fully cooked although in the video there didnt appear to be any issues

So if I'm making it for a large group of people some of whom don't like allot of spice. Could I sub out the peppers for less spicy ones or use less pepper?

Never soak your wood in water. It causes the water to evaporate and steam your food instead of smoking it. I made this mistake when I started smoking food

Cool video but at no point did you give information as to the amount of any ingredients. Sh! t I don't even know what kind of oil you were in the using.
