If it is about the sauce, as his daughter said, then, in my opinion, John Young is not the original. Mumbo sauce seems to be just a regional thing. Entire businesses/franchises have been built around a hot sauce and butter base, not mumbo sauce. Although John Young s legacy is a part of wing history, he did not create the Buffalo wing as most people know it. When the bike tour guide was asking who has had a mumbo wing, no one raised their hand. Now if he had invented a sauce base that combined hot sauce and butter, then that would be another story. But, again, as his daughter said, mumbo sauce is a tomato-based sauce, complemented by citrus fruits and sugar. That is not Buffalo sauce. I appreciate the history and the effort to give recognition. However, I don t think John Young s contribution to fried wings can be attributed as the original Buffalo wing.

What an awesome story. I'm glad John Young is getting the recognition he deserved. The wings look fantastic! Lina is doing his memory justice, and it would be cool to see a new restaurant opened to continue the legacy.

If you like the hot sauce style wing, you gotta try a little celery seed in it and let it simmer a few minutes. Just like an 1/8th of a teaspoon. It makes such a huge difference.

Born and raised in Buffalo (I am white) and I've never even heard of Mumbo Wings. Sure as hell want to try them now though, they look delicious!
