This is my go-to macaroni and cheese recipe. It is foolproof and very forgiving and tastes absolutely amazing. To me, its better than Fanny Farmers recipe (which is also very very good. You can use any cheese you happen to have, sour cream instead of cottage cheese, and you can omit the spices. You really dont even have to mix the ingredients in a separate bowl. I have even thrown the grated cheese into the blender on accident. It still worked!
This is one of those recipes that will change your life, so try it as written.

I used to make this type of macaroni (it's been a while) but with thyme and rosemary instead of spices and over the stove top instead of in the oven. It's easier to get a creamy texture because you can control the heat and liquids. Never tried adding ricotta but it sounds good. I'll probably add it near the end of cooking rather than at the beginning so it doesn't separate and get gritty and watery.

That was a weird recipe. I'll think about it. I'm starting to think the millions of websites and YouTube food videos are causing every cook to run out of ideas, so they're just creating concoctions, rather than recipes.

I prefer a creamy, clingy, coating the macaroni kind of mac n cheese but I never have any luck with good fresh cheeses. It seems to always separate like this. But this does look very easy so Ill give it a shot

I like the ground mustard and nutmeg, good flavor combo for Mac and Cheese! But I'd still want to use some sort of emulsifier & sauce. The end result looks a bit oily.
