It's how to week and as might have guessed, we show you how to sear scallops. And this is something you MUST know how to do. + Carolyn: Here in Michigan we dont have access to fresh scallops, only frozen. The only successful way to get the water out of them when they are thawed is to run them thru a salad spinner. This works great. Ive used this method since watching the video. Thanks, Sam. Love your style.

do not sear scallops this way, Pat them completely dry first, heat pan on high till you see wisps of smoke and add oil, season right before adding the scallops to the pan, sear on each side for 2 minutes at most!

Aren't those little wisps of smoke from a dry teflon pan toxic? I didn't think they were supposed to be heated over medium heat without a liquid. Scallops look yummo though!

Keep doing your thing Sam. Usually I would put the oil in the pan once it's smoking hot, but I'm going to try it this way. Truffle butter on the scallops sounds delicious too.

I agree too much excess verbage. but l really like the simplicity in the how to. simple and looked delicious. l will try them this way. Now to try some sauces.
