I have my own little secret noodle recipe. Thin strips of Carrot, Bell Pepper, Red Onion and Mangetout. Splash of ground nut oil in the pan. Chuck the diced veg in add 2 pinchs of salt and a sprinkling of brown sugar. Then add 2 pinches of normal sugar with 2 tblsps of rice wine vinegar poured over it. Throw the medium egg noodles in the wok and shower them with 5 tblspns of Teriyaki followed by 1 tblspn of light soy sauce and 10 drops of dark soy sauce. Mix well, and add a pinch of chilli flakes in at the end. Now here's the crazy bit. Don't eat it! Chuck it in the fridge for a minimum of 5 hours, let the noodles absorb all the flavours, and then heat it up on 3 minutes in the microwave. You'll never believe how tasty it is!

Thanks for the recipe. I see others asking about LoMein. That's what it would be called where I come from as well, which would be NYC. ChowMein would be mostly vegetables and some meat or shrimps. It's just a regional thing as far as I know when it comes to what it's called. I'm currently in the Philippines so I had to make lots of substitutions, but the core recipe worked perfectly. I sliced up a pre-roasted pork belly for the meat (and put a final slight sear on the meat); petchay (bok choy) for the peas; black bean sauce with garlic for the sauce; a small sliced onion for the hell of it, and pancit canton noodles (Filipino style Chinese noodles) for the noodles. Was quick and easy and turned out great.

I love pork chow mein and want to try it with your two new sauce ingredients. The last two times I have bought sugar snap peas, they have had a HARD clear plastic like sheath inside them that could not be chewed. I bought a bag of mixed salad that had them in it and then later another bag of only sugar snap peas (different brand and store. They both had these hard clear unchewable plastic like sheaths in them and probably grown by the same big box. I haven't bought sugar snap peas since. I am thinking about buying some seeds and growing my own if I can find some heirloom seeds. If I buy GMO seeds, I'll just have the same problem only in my own backyard. lol

This is lo mein, to make this a chow mein you need to fry the noodles crisp and make the stir fry saucier. Sauce will soften the noodles and it's an awesome contrast of textures. Some of the noodles will be soft but some will also be crispy. Pork is very popular but the seafood cantonese chow mein is best with a nice mix of mushrooms and I like snow peas and ginger and garlic. That black bean sauce is actually better in Beef Chow Fun, or Beef Ho Fun; same thing. Flat rice noodles with Beef and Black Bean sauce is amazing.

HI Sam. Been watching for a while. I have made LOTS of your recipes and love them all especially the chicken enchiladas with chorizo cream sauce. holy shit! One comment and its not to criticize. You keep saying Chow mein when in fact you're using Lo Mein noodles. You have said this on numerous occasions. My question is in all sincerity. Am i wrong, or are you just mistaken? Thanks and Keep em' coming brother!

Sad that he never really seasons the veggies. Where's the salt, pepper, garlic, ginger etc. Horrible. Gotta be bland as ever with just the sauce. When you saute, sear meats, or stir fry. you need to season as you go as the exact method of cooking happens so quickly. Elementary mistakes.
