By butter-poaching the pork fillet in a sandwich bag it cooks right through without any risk of over cooking or drying out. Served with awesome chunky chips and chicory braised briefly in a sweet cider makes this the ultimate combo! For the full recipe visit You can also buy our book here

now i know it may sound weird but i would love to see your version of a Jewish course named hamin. i find it amazing because a lot of Jews from different places (Germany, Iraq, Morocco) are making this dish and they all do it in a different way and calling it a different name but its still the same base.
i really would love it if you could answer to my request! :D

Searching for pork belly recipe and feel so weird to see you guys look so young here. Watching Sorted food since 2011, 'seeing' Jamie and Barry married, then slowly the appearance of James. You guys have done a great job to make us- the viewers feel so close with you even we are so far. Thank you

I've been trying to cook pork and keep it juicy for years now, hundreds of recipes later and I hope this is the one I've been looking for, it looks lovely. One question though, would the timing stay the same for pork chops or would it change at all? Thanks in advance!

On the recipe, you put it all in one bag. If you are cutting it in half and putting the pork in two bags as shown in the video, should you put half the amount of butter for one in each or act as if the two bags are a double recipe? Thanks.

For people who don't live in an English speaking country: What kind of potatoes are Maris Pipers and King Edwards? Are they fatty (best English translation I found, don't know if that term exists for potatoes, waxy or floury? PLEASE, HELP!

Raw chicory isn't that bitter is it? I eat it raw, with a bit of cottage cheese and chives, all the time. Maybe the chicory in Belgium isn't as bitter, maybe Jamie and mike were being big babies. questions questions, so many questions

Tip: Salt is actually better for cutting out bitterness. The sodium in the salt actually blocks the receptors for bitterness, causing it to be much less prevalent.

I only just recently learned about souvee cooking, and I'm curious as to what the difference is between that and the poaching that was done in this video.

Also, that proved the comment of the week on the egg brownie video. Ben just loved that bitter, bitter taste while the other two were gagging. What a cold soul.
