Yay! We finally found something James approves of! Sous Vide is French for 'under vacuum' and is a method of cooking where food is placed in a sealed plastic pouch then put in a water bath to cook for a long period of time. Of course the chefs are going to love this one

Have owned that model for about 4yrs now. One of my most used pieces of cooking kit. Doing everything in 1 container is super easy. Start veg 1st, as it tends to be higher temp. When the veg is done, replace about 1/2 the water with cold and set your temp for your protein. Don't have to remove the veg bag, as it won't continue to cook, but stays warm. When your protein's done, everything is ready to eat after you reverse sear the protein.

Ditto on the life-changing aspect of sous vide. It makes perfect-to-taste food: salmon, steaks, chicken, vegetables, even eggs and desserts (put 'em in 4 oz jars. Also, if we decide we would rather have another martini before dinner, no problem. The food will not overcook! Love my Anova. I prefer it over the Joule because I don't need a phone to cook with.

Anybody bothered by all the toxins being released into your food by boiling it in plastic. just no. there is no way I would ever cook my food in plastic. Idk how they dont taste the plastic. if I so much as reheat something in plastic I can barely eat it but I cannot reheat any type of protein in plastic. all I can taste is plastic.

ive used it. with plastic bags and had to buy a new vessel to cook it in. I guess my pot was too small and the bag kept getting to close and it would melt a hole in the bag drowning the steak and boiling it. after getting a basically plastic rectangle container and using that it works great.

For steaks would this really make that much difference over doing a reverse sear? I suppose for chicken if you do vacuum pack it you dont have to be concerned about bacterial growth from cooking at too low of a temperature?

Old video but just watched it, got one of these years ago when it was a kickstarter. Still works great, and while I dont use it all the time it is a fantastic device. My favorite with this is eggs.

What about the exposure of plastic chemicals? I would think this would be the best possible way of doing it - v high temps for a long period of time right next to food

OK, James calling himself a keen home cook makes me want videos from James and Ben about how they cook normally when at home, so we can see what a Chef does at home!

I've had one for a couple of years, I'll never go back to cooking steaks any other way. Perfection every time, even for a duffer chef like me. It's worth every penny.
