I feel like it's possible that they may have tweaked the recipe to be better understood for home cooks - because when my mom makes these cookies, they're delicious and remind me of when I would stay at Doubletree. When I make them, having graduated from culinary school, they come out strange and unsatisfying. It's like they have an anti-chef aura.

You need the lemon for the cookie because it makes a chemical reaction happen:
The soda contains (CO3)2-. Once you add an acid like vinegar or lemon juice, it will release CO2, which is a gas and help the cookie rise. If you don't use the acid, it's not gonna be as fluffy and chewy, because there's less gas.

Are y'all stalking me or something? I made the exact same thing and customized it the exact same way like a month ago; browned the butter, used more brown sugar, almond extract, dark chocolate, chilled overnight. Except for the sea salt.

The doubletree cookie recipe was hands down the best cookie recipe I have ever made and I ve never even tried the hotel version. I am not sure what she thinks is so bad about it. Maybe ile try her recipe for comparison

Kiano you are so awesome! I travel for work and frankly one hotel (Double Tree) with check-in chocolate chip cookies beats out another hotel without! And just maybe they'll take a tip from you and up their cookie game!

Where have I been that I have not come across Kiano! I am really liking her and her upgrade to this cookie is amazing. Who would think that just browning your butter and walnuts would make a difference! Great video!

It s good that you upgraded the recipe. I work for Doubletree and the cookies there are excellent. Not sure about that first recipe you made but I know it s totally different from that
