
3 Ways to Use Your Homegrown Rosemary

Rosmarinus Officionalis can be trimmed and dwarfed bonsai-style. I've made rosemary look like miniature Monterey Cyprus as gifts. In just 3-4 years, your chosen trunk will thicken into a shaggy 2-3 inches at the base. I transplanted into mounded fungi-inoculated soil in wide square pots 5-6 inches deep, a bit larger than standard Bonsai pots. (I enjoy pottery, so I usually made my own, paying a friend to fire them for me) After established, I planted Creeping Mint around the base. Add a couple little craggy rocks and the Penjing illusion is of a old tree on a rocky hill. Trimmings from the mint make a nice tea. Pruning to expose the trunk, removing almost all needles from around the initial forkings of your chosen limbs, and from the undersides of your branches, not only shapes the tree effect (while filling your dried-spice jars) but harvesting from the largest needles also teaches the rosemary to produce only smaller needles.
Rosemarinus Prostratus, with smaller needles to begin with, also produces usable spice of a slightly less intense flavor, and very quickly develops an aged-looking trunk. It is called prostratus for a reason, though, and will require props and wiring to train it vertically. After 20-24 inches you can train the new growth into an astonishing illusion of a Weeping Spruce. except in season it will be full of tiny pastel purple and lavender flowers. Bees love them, so it's best to give them a week outside out of the wind in partial sun.

I live in USDA zone 7b and can't, for the life of me, keep rosemary alive through the winter. I tried bringing it indoors, but it died from insufficient sunlight. I tried leaving it in the ground under a row cover, but it was dead by February. I tried leaving it in the greenhouse under a second layer of protection, but that still wasn't enough. I'm considering looking into a cold hardy variety, but I don't know which one to go with, and I've heard they're still hard to keep alive.

You can make rosemary chocolates by putting some whole rosemary sprigs into the double-boiler with the chocolate chips as they are melting, then pulling the sprigs out before tempering/ transferring the chocolate to your molds of choice. Herbs and chilies can also be gently boiled in hot cream then strained out to make an infusion that you can use as the base for dessert dishes (whips, ganache, panna cotta, mousse etc. Rosemary pairs really well with white-chocolate!

We use rosemary alot when someone gets a runny nose thanks for the other ways. Thanks to you guys with the space i have i can grow tons of beans, strawberries and more. Edit: how do we use it when someone gets a runny nose? We boil it then let the person inhale the steam.

So envious you can grow it as a perennial. I have to grow it in a container so I can bring it inside every winter - and so sad, I've never had one bloom. But love the tips from Ana - and the propagating! Thank you!

This is so fabulous! Rosemary is one of the best herbs to grow n have for a myriad of reasons. It has so many wonderful properties. I have a decent sized plant n I m excited to try and make some balm.

My grandmother grows her own and then makes homemade bread with it. Omg if you ve never had it before it might sound weird but get some from the store and try it. It s amazing. Homemade is even better.

When we moved I to the house we currently own, there was a rosemary bush that was easily 50 feet by 30 feet in total area. We've never been able to make a dent in it lol

I stayed in Petaluma years ago and Rosemary was grown as a hedge. It was beautiful and it just so happened to be blooming.
