you can process tuna easier and have less waste by skinning the fish while it's still whole. make the standard cut behind the gill plate, then cut through just the skin on either side of the dorsal fin/skeleton from head to tail and then the cut up the belly as normal. grab hold of the upper skin nearest the head and peel it off, be gentle the closer you get to the tail and stomach. slide fingers down the bones, both sides, that run outward from the spine to the side of the fish. remove the upper quarter of the fish and then the lower quarter. flip and repeat. you'll have 4 roasts. then you can trim the blood line if you so choose. I don't mind the blood line. and the belly meat is great in the smoker. I peel halibut the same way

Ok When Filleting Fish This Goes For Any Type When You Hit A Hard art Dont keep forcing the blade you ruin you filleting have a steady hand also try to use one knife if you use an assortment you cant get used to one blade. ive had a freind cut his middle finger off sawing decent job though

O know this is old as I watch this I want to tell you that blade should never be pushed toward your other arm always pull apart with your motions. That looked like it was butchered by a run away train. Think of it as always spread.

Great attempt love the effort and you can definitely tell it was your first time with yellowtail. Still thumbs upped the vid cause I love the effort and just diving right it, not all women or even men would today in age

Good effort. but I think you need a refresher. You made the cut for the top fillet on the wrong side of the pectoral fin. I am sure you learnt from that first attempt.
