I would like to emphasize something you have not mentioned, Darcie, It is to not cut towards your other hand, but to always position your hand holding the fish to the rear of the knife, not in front of it. You do this thoroughly right, in the entirely correct manner, but it is worth pointing out to newbies exactly what to do and not do. Keep it going, you are so entertaining and skilled at this.

Hey Girl love your vidios, but I take it another step forward, first i scale the fish then take out the gills, now i have the whole fish, then i boil it in 2 quarts of water then i strain it a strainer add to the fish stock 2 quarts milk pepper corns, sliced onions. next i seperate the bones from meat, put it into soup and you are in heaven DEELISS Go girl keep upthe good work

for spicey mix. I add garlic powder, onion powder, chili powder and black pepper to cornmeal for the coating. server over fried rice (to which I add black beans, corn, carrots, quinoa and of course the scrambled egg. to freshen up the fried rice, I sautee more carrots and asparagus or broccoli. makes a great meal, and is quite healthy.

I like to scale my fish, (most species, before fileting. That's just my preference than I can either cook as is or skin it.
