Why don't use ever use electric knives? Up north we cut right through the rib cage, leave the skin attached to the tail fillet between the skin and meat. Then cut the ribs out. I can do 5 fish to 1 with an electric verses a regular fillet knife and cutting the fillet off the tail and then removing the skin because there's nothing to hold on to. This was one of my favorite videos though but I still have no idea what grits are.

enjoyed the education. Might try adding the scallops last in the recipe with the bacon, scallions and garlic. They cook in less than a minute and would be much more tender and juicy, and would allow the other ingredients to cook more thoroughly

Fresh scallops was my fathers favorite sea food. I used to eat them every year on his birthday to remember him by, but you just cant find fresh scallops in Wisconsin any more. Living in a small town doesnt help either.

Scallops are super easy to clean, just pop them all open then get a shop vac and use it to suck out the guts. then you just scoop the meat out. Thats how we do it in crystal river.

Loved the video. As a former scuba instructor, I loved your free diving technique. Good job. The scallop recipe looked yummy. Grits and bacon, it had to be good.

I ve grown up in homosassa my whole life and believe it or not I have never been scalloping. I hope to get out there and try it this season. Awesome video guys!

Pudding, the magic is BACON! That is how Southern cooking got famous. Used to be EVERYTHING in the SOUTH had bacon/ bacon grease as the primary ingredient!

It's good you bring your dad along for this stuff but make sure he drinks plenty of fluids. He's at an age where dehydration happens easily.
