It turned out tough because you skinned it and then grilled it drying out everything.
next time grill it with the skin on so it cooks in it's own fat fully insulated by the skin and becomes flaky n' tender.
and when it gets through cooking you peel the skin off and drizzle hot seasoned butter and with fresh herbs over the meat!
Customarily it's only the tail you eat.

My wife has eaten iguana. She said it's good.
Reptiles are more closely related to birds than to any other vertebrates, so it's normal that they taste like chicken. I wanna eat iguanas and anacondas, but I'm not sure I'd eat aligator.
