JellyFish- Catch Clean and Cook BlueGabe Style -sushi-- Maria: belly, collar (what you called throat, and face meat on big fish is far superior than everything else on the fish! Tuna and Bluemarlin collar is the bomb when marinaded in salt, pepper and lemon/lime then grilled with garlicky butter! The fish head is best as the base of a hotpot with the regular meat put in later.
Jellyfish is mostly saltwater thats why its eaten raw. But you can always try chopping them up and pouring hot boiling oil with spring onions over it. Jellyfish is more a texture than a taste. It takes on the taste of any sauce you put on it. To lessen the saltiness of certain jellyfish, you soak it in cold water.

I saw this in Thailand they wash take it's head and throw away tentacles. They sun dried it first until it completely dry, and then they cut it about coin size dip it with sauce. chili, garlic, onion, honey, lemon, lemongrass, ginger they turn them all those into a sauce for dried jellyfish and sesame on the top and grill until it turns crispy it taste like dried sweet& spicy anchovies.

Just ate a big dish of cold jellyfish at ABC in St Petersburg. They boiled and sliced it into noodles. Served on a bed of sweet pickled daikon and carrots with scallion cilantro and toasted sesame.
First jellyfish ever and it was awesome.
Fresh bao (steamed fluffy buns) made it seriously tasty.

From Hong Kong, I love jellyfish: D
You poach the jellyfish for 10mins, cool it down in the fridge, slice it into noodle shape.
Mix these noodles with japanese style sesame salad dressing, carrot slices, toasted nuts
Yummy!

Not only throats, but cheeks and backs are excellent. When I want some backs, I use an electric knife to fillet the fish. That leaves about 1/2- of meat on both sides of the backbone. Excellent fried or grilled.

It's amazing how many people throw away the fish throat, and have absolutely no clue! I was one of those people, till someone some years back showed me the light with redfish -
