These are really sought after all over the world. Officially called Bigeye (unofficially Bigeye Snapper) in the USA. You'll also see them called Catafala, Aweoweo, Glasseye, Glasseye Snapper. They're not a snapper though, they're actually a Priacanthus.
Fillets are delicious, however I've always immediately taken off their heads and guts, then peel off the skin. Baked or fried, they're amazing. Much like the Blackbelly Rose and Sea Robbin, there is a HUGE market for these in Chinatown NYC (Manhattan and Flushing)

Nice vid! But here in Hawaii we call it aweoweo. Pronounced (ah veyo veyo) Ive been fishing since 11 but 23 now and its one of the best fish you could get down here. Also been diving too and its actually a targeted fish to shoot for a lot of divers. Nice big one tho, they dont get much bigger than that down here

Porgy fish, is trash fish but most people aren't familiar with the sulleye fish, I used to catch them as a kid alone the Rocky shoreline and they're the best

My grandparents used to smoke large mullet and make a fish spread out of them. I highly recommend it. Keep up the awesome work!

I love eating Big Eye Toro! caught some on a night party boat out of Largo. Damn things tasted like shrimp! I was astounded!
