Yummy! I'd love to catch some Mahi. I have never been off shore fishing, that would be such a treat. I love beurre blanc sauce. So eloquent, yet fairly easy to make. The reason you add butter slowly is because you are making an emulsification and thus want to incorporate the fat (butter) with the acid (wine) more completely.

Haha I think its funny when people talk about the best baits for dolphin. Here in Panama where I live the local fisherman catch them on a piece of PVC pipe with a weight and a hook. Ive caught tuna with a piece of Pipe. I should have done a video talking about how they bite best on pvc.

Can you post the link to the buck tail. I live in NY near J&H but do most of my fishing down there out of the same inlet and would like to pick some up for my next trip.

Chef's tip, use 4C breadcrumbs, the best! They have regular plain, seasoned which is the best and also panko versions, this is my go to brand PERIOD! Give them a try!

Just wanted to give you guys a heads up. The mullet are stacked by the Juno pier. Tarpon are feeding on them. But the waves are really bad.
