Looks great! Gonna have to give that a shot. Up here in Tampa, I've seen spanish filets (skin on, coated w/ mayo (Duke's of course, and dusted heavily with cajun blackening spices. The spice compounds are oil soluble, and the mayo keeps the filets from drying out. Cold smoke at 180 until desired texture achieved. SPICY! add a cold beer for a nice side! (old Gandy Bait & Tackle recipe.

Fish dip looked great. Do a fish dip giveaway! I caught a huge gaffer spanish like that giant one out of Port Everglades last year. I found out later it would have qualified for the length world record IGFA started up a few years back, but you have to photograph it on their official ruler and release it to qualify.
