This is a great dinner, inspired by all of you! Mesquite smoked Venison Balls with Mushroom and Onion Gravy over top of organic Brown Rice! SO GOOD! Will: I got one for ya. For when you at camp. Take the deer back straps and slice them about a half inch apart cross grain but not all the way apart. Make or buy a foil pan. To place them in with the tenderloin the same way. Place onion and peppers into the slits. Smothe over with butter then add your seasoning to taste with garlic being the main. Cover with hickory smoked bacon then make the sides. Get some large baking tatters and stand them on the edge and slice them long ways. Lay them open and ad lemon pepper. Season salt garlic powder and accent salt. Place 2 prices of bacon inside with mushrooms and onions then close them back together and wrap with a slice of bacon. Roll it up with foil. 1 per person. Before going hunting get hickory charcoal ready on the grill. Rake the coals to the front of the grill and add a little more for the smoke. Place all to cook on the back of the grill. Indirect. Go hunting or fishing for about 4 hrs and chow down. Put your own spin on this if needed.

Good evening Robert your meatballs they look yummy and with that love potion your gravy is even better as it lasted longer is that a scar I can see on your neck and did you get that when you was hunting or was that caused when you had the accident on your bike with your foot

Those meatballs would be much more flavorful and tastier if you stuffed it with fatty bacon cubes & chunk of quick melted cheese inside and then make sweet & sour sauce with lots of white onion, red & green bell peppers, and baby carrots!

I just got through grinding about 25 pounds of deer meat this evening. Man, I'm tired. But, happy and thankful! My son and I had a grilled backstrap wrapped in bacon last evening! Good stuff!
