You may want to try sprouts also. I have been doing mung bean and other sprouts for years, to the point that it is fairly easy and only takes about a week (and you mentioned 9 days for greens. I agree with the other post mentioning a hydroponic setup, or using less soil that you use. For the first week, seeds usually get all the nutrients from the stores in the seed itself, which is why a lot of people just go with hydroponic methods. Soil seems a little more messy to me. I usually can do a batch of sprouts in 7 to 8 days and other than having the roots attached, they look pretty much like what you have there.

Wow! My mind is blown. I'm into hiking so watch your PCT hiking videos. But I'm also into small-scale urban gardening and was doing some research into micro-greens.
I saw the thumbnail to this video and thought that girl looks just like Dixie
Was totally amazed to see it was the same person.

Hi Honey, I do not know if you compost your roots and stems and turn that into compost tea to water the plants to get more nutrition. This year I have added red compost worms to my in house compost bins. They will break down the waste product faster and the worm castings make excellent fertilizer.

I'm glad you're still posting after your AT thru-hike. We've got 9 acres that we farm and do some hydroponics. F. Monsanto! Fresh organic eggs from our chicks. Organic veggies and fruit from our garden. Self sufficiency. Great video Dixie!

Did you have them under the lights for the first three days, or just rotating them without any light? Also were the radishes different as far as keeping them under the lighting?

Love this idea. One of my favorite veggies is butter beans. Not lima beans, BUTTER BEANS. Cannot find seeds anywhere. I'm going to try your simple plan and can't wait.
