Sohla Makes Medieval Gnocchi (with Carla Lalli Music) - Ancient Recipes With Sohla Alejandro: I can't believe that Carla has never made potato gnocchi. What are you waiting for! Here, in Argentina, they're a very common and beloved food, obviously brought by Italian immigrants and made popular because they use very cheap ingredients. It's a little bit challenging to get the right texture and consistency, but they're a delight. There's even a tradition (almost lost nowadays I guess) of eating them on day 29th of every month (maybe because they're inexpensive and you've run out of money by that time in the month, and even of putting a money bill under the plate as a superstition about economic prosperity.

After watching several of these videos and hearing you consistently talk about how much tougher food was to chew back then, I've come to realize I would like ancient food. I hate soft, easy to chew stuff. I like hard crunch, tough meat that takes several minutes to chew through, and fibrous vegetables. I like the sensation. I must have a real old school palate lmao.

So Scappi loved adding sugar to many of his savory dishes and not small amounts. Sugar at the was still considered a spice and dessert type dishes were really just started to a thing during his time. Some other recipes used like fist's full of spices like cinnamon and black pepper.

Is it possible to ask for Sohla to cook something my (Aboriginal) Australian ancestors cooked. Like Snake, Crocodile, Emu, Turtle or Kangaroo. I love crocodile and Kangaroo is pretty tasty when cooked right. I enjoy the show regardless, I just notice no one ever cooks those.

Fat Broth is actually pretty simple, it's just like making any other broth, but instead of bones and meat, you only boil the fat from cuts of meat. the fat breaks down, flavours the water, then the insoluble portion cools on the top and is removed.

It's interesting they use cinnamon and sugar. The Sicilian godmother of a friend of mine uses cinnamon and sugar in her pizza dough and it sounds weird but it's actually interesting. Not my favourite but not bad either.

When you; ve got a guest on, it helps them a lot when you give them a few lines of interest instead of just, -Hey, did you know, - Giving them -Yes, - lines. Let your guest have some expertise to bring to the show as well.

I feel like when the dough was split it threw off the ratios and that's why there was a dough that was a bit too dry and a softer one. that might be why it was so chewy when it came to tasting xD

I really like the show but Im still waiting for an ancient recipe from African cultures. Its weird how we have covered Europe, Asia, even the Americas but the cradle of civilization is ignored

Hey Sohla we love the show. Can I suggest you dive into Peanut Soup. It-s a very old dish from the South but I suspect the origins are much earlier dating back to African cooking.

There is a sort of irony to serving this pasta with a sauce that could never have existed at the time of the pasta, since tomatoes, like potatoes, are a new world vegetable.

If I-ve learned anything from Max Miller it-s that any time you get a Scappi recipe be prepared to cut it down by 90% because his recipes are are always for GIGANTIC groups.

I always think of gnocchi as pillowy but that's not what knuckles are like, are they? I am now trying to figure out a story I can title 'Tough Gnocchi. '

almost 4 mins on and all they have is a minute amount of dust. we are so spoiled now with our food processors and better kitchen stuffs lol

Love gnocchi, my grandma and aunt would make them with left over mashed potatoes with just browned butter and maybe sometimes red sauce

We make our own bread crumbs at home, the trick is to toast the stale bread and then use a rolling pin to make them into crumbs!

Only problem I have with this is tomatoes came from American too, so I-m the original recipes there would have been no tomatoes
