Actually claret didn't mean clear wine it was a dark rose wine that was spiced and it wasn't till the middle of the 18th century where it switched to being a dry Bordeaux wine. Nowadays most people recreating recipes that call for using claret tend to use a fortified wine like sherry(sweet not cooking) or port.

if the molds work the same as dutch speculaas molds- you don't have to grease the molds, just flour them with rice flour! that way they come out really easily.
i wonder what came first, speculaas or gingerbread? queen victoria's gingerbread kinda reminds me of speculaas, except for. the bread and wine lol

Have to disagree on the choice of bread. The Elizabethan gingerbread was ALL about the flex, it was a dish for showing off, they would have used the fairest flour they could get. Like those things were often completely coated in gold leaf for serving, they were not for a brown-bread kind of affair.

Chanukah ended almost a week ago. It's not the -holiday season-, it's the Christmas season. I wish people would just admit it! Chanukah isn't Jewish Christmas and isn't about winter (it's about a military victory against a colonial occupier. Just leave us out of it, and enjoy the cookies!

The gingerbread stick man would be cool with some frosting for kids to dip into. The shaping is also very kid friendly.
It isn't ancient but I think covering the history of peasant dishes that became favored by wealthy people are interesting. Things like lobster bisque.

I made speculaas biscuits recently and bought some cute traditional Dutch moulds specially for the occasion. I don't know how to get good definition! I tried freezing the moulded biscuits before baking but it didn't help.

Cleopatra's favorite types of food's, and that mummified Irish bog man would be a good one. Plus they found that iceman with wooly mammoth which difficult to recreate, but I think he had seeds etc in his stomach.

Wouldn-t it have made sense to use floured rolling pin to get the dough in the cookie mold? It allows for pressure to get into the nooks, and also acts as a leveler to remove the excess dough.

they must have had a better way of making bread crumbs surely? i cant imagine someebody grating bread for an hour with a tiny grater. they must have had some big stone grinders or something

As someone who has textural issues both mouth-wise and feeling-wise, I don't think I could ever do finger-whisking, that kinda slimy and off texture would just make me very uncomfy

I would have just put the dough in the mold, pressed it down well enough, put a floured cutting board on top, flipped it, pressed the mold down firmly, lifted and trimmed the excess.
